Now for my first recipe in my Happy Herbivore Series! For reference, here is the book I am referring to: Everyday Happy Herbivore: Over 175 Quick-and-Easy Fat-Free and Low-Fat Vegan Recipes
So, this is what the pages of the recipe look like, minus the actual recipe:
The only ingredient I did not use is the optional dash of ground cardamom. I used dark chocolate chips that I got at Whole Foods. They were kind of intense so if I were to make these again I would probably use less than the 1/2 cup that the recipe calls for.
This picture actually shows the mixing for the second batch of cookies I was making. The recipe tells you to add oats until the mixture is not too wet. This is what it looks like after I added more oats.

As you can see, they don’t quite look like the cookies in the photo. I’m not sure why this is. I think I may have needed to grind the oats in the food processor for longer. It still tastes really good. After they have cooled, I like to put them in a ziploc bag and then in the freezer. They taste really good as a cold treat. I usually have to put them in the freezer anyway because I end up with so many of them! I didn’t count them before we ate a few so I don’t know exactly how many I made but the recipe says 2 dozen, which is quite a lot.
My only gripe with the recipe is that you don’t end up using the entire can of white beans that it calls for. I just freeze the beans that I am left with to use in a later recipe though.
If anyone else has made these I would love to know how they turned out for you. I’d also appreciate any feedback on why my cookies might look different than the ones in the book!
