One of my favorite vegan cookbooks, and also my first and only vegan cookbook, is Everyday Happy Herbivore. This book got me interested in veganism and in cooking. The meals are easy, the prep time short, and the food is delicious.
This book was gifted to my by my older brother when he was going through a vegan phase. My brother is on a never-ending quest to find the perfect diet for longevity. A few years ago this was veganism.
I am actually a vegan now too as of December last year. I’m not perfect and I’m sure I have slipped unknowingly here and there. I’m also not entirely convinced a vegan diet is the healthiest diet one can be on but I am appalled at the environmental impact of factory farming and I don’t want to have any part in it.
Anyway, to start my blog off I decided to do a 4 day Happy Herbivore series, where I make some of my favorite recipes from the book and comment on them. Today is day one and I will start a new blog post to begin!
