Today in Happy Herbivore Series:
When I need to cook and I don’t want to make anything elaborate, this recipe is the perfect fix! Only a few ingredients, super fast prep time, and delicious too! Healthy? Well, it’s okay health wise.
We went through pretty much all of the black bean soup (different recipe) that I made the other day so I decided to make this tonight when my husband got home from work.
These are the only ingredients needed, minus that bag of paprika. For some reason I thought I needed that and I took the photo before looking at the recipe so let’s just ignore it. Inside the greek yogurt container are black beans that I cooked using my awesome instant pot (I will make a post about this someday, I love that thing). You can also add a dash of hot sauce to this recipe, but I don’t have any hot sauce so we do without.
Mix of vegetable broth (sugar free of course!), salsa (also sugar free and the hot variety), black beans, and cumin. Yum yum! I use my nutribullet to mix it up. This is my only blender, except if you count my food processor.
Blended up! Time to pour it in a pan.
Add thawed corn and more black beans.
Stir it up and let it warm up!
And serve. I like to top mine with avocado and trader joe’s baked fat free blue tortilla chips. Good stuff. It was REALLY hot. So I had to let it sit there for a while cooling down. Make sure you let it cool before serving!

A nutribullet! I bought mine about 2.5 years ago. I’m not sure they sell it anymore.
This one is actually selling for pretty cheap. Yeah, it’s refurbished but I’m sure it works fine. If I were replacing my nutribullet I’d buy this one. My mother in law has a nutribullet too and she uses it every morning for her wheat grass green juices. My older sister has a vitamix, which admittedly looks awesome, but my husband and I like to be frugal.
Other than that, I didn’t really use anything special for this recipe. I might make more posts in the future about what else I make with my nutribullet. It’s pretty diverse.
